Opening its doors in December of 2023 after almost two decades of construction, the Fontainebleau is currently the newest hotel on the Strip, bringing a taste of Miami to Vegas. Opulent rooms and suites are done up in blues, grays, silvers and marble, and an elevated casino floor features plenty of natural light and high ceilings. But the real star of the show here is the food: Fontainebleau features thirty new restaurant concepts with every one being first-to-market in Vegas, meaning these are chefs who haven’t really opened anything here before.
Standouts include the first outpost of MotherWolf outside of Los Angeles for Italian pasta wizard Evan Funke, as well as upscale Chinese cuisine at Chyna Club from Hakkasan creator Alan Yau, who also debuted a more casual daytime concept, Washing Potato, that focuses on dim sum. A classic, formal steakhouse, Don’s Prime, is mirrored by a “clubstaurant” party feel at Papi Steak, and an omakase sushi counter from Ito in New York is similarly echoed by a casual hand roll counter, Bar Ito, in the food hall. Wash it all down with a round or two at Collins Bar, the rare Vegas drinks outpost that manages to feel like a special occasion, even in the midst of the surrounding glamour.

Encore Beach Club is where you’ll find a day club atmosphere that takes the term “pool party” to a whole new level. Observe the mass from the fringes, join the crowd for some serious dancing in front of the stage or opt for an ultra private, luxurious cabana where you can flit between privacy and partying.
Though Encore Beach Club occasionally hosts evening events too, most of the nighttime DJ sets and parties take place at XS, a second venue and nightclub that’s booked everyone from Justin Bieber to Marshmello, The Chainsmokers, Kygo and Swedish House Mafia. Aside from the excellent club scene, one of the resort’s on-site restaurants, Delilah’s, offers a more old school supper club experience for a break from club life but not nightlife—just note that there’s no phones allowed at this restaurant, so you’ll have to save the TikTok videos for later in the night when you’re back at the club.

Housed in the former Monte Carlo complex, this hotel offers multiple restaurants from celebrity chefs, a great music venue (past acts include Lady Gaga, Bruno Mars and Usher) and a prime location near the T-Mobile Arena and The Park dining and entertainment district. All of these premium amenities come at a price point that is often several hundred dollars less per night than other comparable properties. While the pool complex here might not be as elaborate or massive as those at some of the other hotels on the Strip, it offers a freewheeling party atmosphere that can’t be beat. That, plus dinner at Roy Choi’s Best Friend or Chicago steakhouse Bavette’s and a night dancing at the club, On The Record, makes for a perfect and affordable Vegas getaway—all without leaving the building.
